Use Chewed On Bones For Stock? Ick?

OK. I usually make stock from pristine bones. They are either never been cooked or they have been cooked but have never been in anyone's mouth.

My husband tossed some leg bones that my older son had eaten the meat off in with my pristine bones for broth. I let out a big huge "ICK!". He thinks it's ok to use those bones. I say it's not because of the enzymes left on the bones from the mouth. I can't find anything anywhere that says it's ok or not.

So, who uses chewed on bones, who tosses them?

um...i'm a vegetarian, so wouldn't personally use either.

HOWEVER...i've also quite a bit of food experience. as long as you heat the food to over 165 degrees...it won't matter, any enzymes will denature, and any germs will die.

Yeah, I would not worry since you have to boil it and cook it a long time anyway.

this is pretty much how i make chicken stock..cook the chicken, eat the chicken, save the bones and make stock with it. didn't know anyone thought that was grody.

When you boil/simmer the stock, any germs or whatever will cook out.

Besides, I think stock was traditionally made with chewed on bones. I can not imagine anyone would be able to afford to use pristine bones just to make stock. Making stock out of leftovers would be the norm. It's all about making your food go as far as possible.

I used "chewed-on" bones, but it squicks DH, so I have to sneak them off the plates and into a freezer bag when he isn't looking...

(Unfortunately, the nights we have roasted chicken are my cooking nights, and if I cook, he cleans up. So, I end up making up a reason to clean up dinner, just so I can get the bones! "Why don't you relax and watch some SciFi, sweetie? It won't take long for me to take care of these dishes...")

No more shall I waste chewed upon bones!

Exactly!

And technically, everyone in your immediate family will be used to your germs anyhow- should any of them survive a slow cooked- all day, ( or several day )stew

after reading the title I thought the op wanted to use bones previously given to a dog for stock! That would be pushing it a bit far for me!

Most of the bones that I use for stock have been eaten off of, like bones out of lamb chops, ribeye steaks, pork chops and chicken. I have never even thought of it being unsanitary. I usually simmer my stocks for 3 days so I cant imagine any leftover spit would be an issue.

I though you where dog chewed bones.

People chewed we use all the time. They make yummy stock.

Just our family chewed bones though

I always save bones for stock making. Most of the time, we cut the meat off the bones and leave the bones in the serving dish- except for the leg bones, which end up on somebody's plate- usually mine. I won't put those back in the serving dish (sometimes there's enough leftover meat for a whole meal for the family, other times enough leftovers for a meal for just me) but I will put them in a baggie in the fridge. Next time I make broth, all the bones go in the crock pot with a couple of onions (or one big one) and the veggie scraps we've saved during the week.
