Can you cut the scoby to make it fit in a smaller container?

Yes, you can. I have done that many times, as I use various sizes of containers, for brewing and storing. They don't seem to mind being cut. I let one scoby go for a month or more, and the thing was about three inches thick, and about 8 inches in diameter. I had to saw through it to just get it out of the container! And I used both halves in the next batch, it came out fine. (I didn't drink that kombucha, of course, as it was much too sour!)

Cutting poses no problems that I've run into!
