Gravy ideas?

I am roasting a chicken today. Yum! I do this every week, and I usually make gravy from the drippings. I use a bit of flour to make it . . .probably a no no, hey? How do you make gravy TF? Soak the flour? Sorry if this is a silly question, I am a total newbie and I am waaaay down on the list for NT at the library :

Also . . . what do you do with leftover gravy? Seems a shame to throw out all that fatty goodness, but after the meat is gone, I'm at a loss as to what to do with it .

ds is gluten intolerant so i use arrowroot powder instead of flour. we had some roast chicken and gravy the other night too. i put the leftover gravy in the freezer. hopefully it'll be good when i thaw it for the next chicken. i plan on just adding the drippings to it and heating it up and that's about it, because we had enough left over for another chicken without making anymore gravy.

I don't know how to make gravy TF, either, so I'm interested in an answer to that one. We're GF, so I usually use cornstarch to make gravy.

As for the leftover...put it in a soup.
Or make a thick "sauce" out of it. I would put some leftover chicken bits in it, plus some veggies (green beans, onion, carrots, whatever I have). Heat it until the veggies are cooked to your liking and serve over rice or pasta.
Or make it the base for chicken pot pie or some other casserole--maybe chicken a la king?
Or put leftover chicken in it and serve it over mashed potatoes or over sourdough toast.
I'm a big believer in using the leftover of anything as the starting point for my next meal!
