Chicken Necks

I got a deal on some chicken necks. I was thinking that they would be good for stock, I sure hope so with as much as I bought. I am thinking of just put a bunch in the crockpot and make a concentrated stock and then freeze it. Would it keep the nutritional benefits if I did this and just reheated when I wanted to use it? I am thinking that way I would use it for cooking rice, like I used to with bought stock and I could throw it into other things in place of water. I usually just make soup with the stock I make that same day or the next.

Yup, chicken necks are great for stock.

If you freeze it in ice cube trays, you can pop one or two into a recipe the way you might use boiullion cubes (and a heck of a lot healthier!)

I wish I had remembered to freeze mine in an ice cube tray. As it is, I get a quart jar out at a time.

But yes, chicken necks are *awesome* for stock. And if you got a good deal on it, even better. My pastured chickens come with the neck attached.... I wish she took them off and then sold them separately.

Azure is now carrying them for like fifty-some cents a pound if you buy a 40 pound box. I think they will last me a while
