doll stuffing?

I'm starting to make a stuffed doll for my daughter. She adores dolls and we are in a medieval re-enactment group (SCA) and I'd like her to have something she can take there. A friend of mine made a beautiful barbie-scale doll, all hand sewn, stuffed with wool and wearing authentic clothes.

I'd like to do a baby-scale doll and stuff it with poly fiber fill. I've noticed some of her commercial dolls have beans or rice or something weighty in the butts, and at the bottoms of legs and hands. They seem to sit and flop better with those "pellet parts."

1) Should I do that? Pros, cons?
2) What should I use for filling? Beans? Rice? Or something not foodie. We might take this doll camping. She could get a bit damp or caught in a rainstorm. She doesn't need to be washable, but she should be durable.

I would use the polypellets and fiberfill. If you are concerned with them coming out, maybe sew them up in a nylon for the body so they are extra secure. you could use rice or beans, but I think they tend to be lumpier because of the shape. the polypellets are nice and small and seem to mold well and be softer...just my two cents
