So far my meals aren't planned per day, I make from scratch even sauces, so really it depends if the night before I had a chance to do all prep work and beforehand stock making/sauce making etc.

Mon - was roast with onions/mushroom/sour cream sauce over rice, broccoli and I mulled some hot cider so we drank that (me with a shot of bourbon )

Tues - tonight is teryiaki chicken, probably over rice, probably a salad and I made a citric dressing last night for it

Wed - pizza with homemade spelt crust, marinara sauce that I will make tonight for the breadsticks
Some kind of veggie, though I make the pizza sauce with sweet potato, tomato, onions, squash, carrot so it's already very healthy

Thursday - Gyros. I will make up a lamb/beef seasoned meatloaf type wed night and bake it thursday so we can slice it. I always have tzatziki made up , some fresh from sunday and I have some little tomatoes to use up.
- I will make up some spelt flat bread sometime before then.

Friday - not sure yet, probably general tso chicken for DH and maybe simple pasta dish for the kids and I

Lunches will be probably leftovers and grilled sandwiches, I always make some kind of soup for the week. My kids like to drink them with fat straws in little to go type of cups.

Snacks, I made some pumpkin raisin bread already, shakes, whatever we grab.

Thursday and friday may be switched based on whether or not I pre-make the flat bread in time!

texaspeach that chicken carbonara sounds good. I like to make that only once a month or so because I gain a few that week.....I usually eat most of it my self! I have some pancetta to use up

Would you guys mind posting these recipes? These sound great!

texas peach - Spaghetti Carbonara, Cream Cheese Chicken, Mustard Glazed Pork Chops w/ Stuffing

I have been sick so my meal plan for this week was all messed up. I'm working on next weeks now.

cream cheese chicken

grilled shrimp I don't bother with skewers and just put them on the grill, searing in a very hot pan works too

the carbonara is just a regular carbonara recipe with no recipe. it's cheese heavy, so not easy on the waist line. mix together a few eggs, maybe some milk or half and half, a bunch of parm. and set aside. cook bacon or pancetta until crisp, drain and crumble. cook spaghetti and drain, return to the hot pot immediately and pour the egg/cheese mixture over it and stir it quickly. the heat from the pan cooks the egg and makes a sauce. top with bacon/pancetta

mustard pork chops.. just brush chops with whole grain mustard I use this stuff - a little goes a long way. you can mix in a little honey and/or thyme if you want. grill or pan fry, if you stuff them baking works. if you have thick chops you can split them and stuff them, but I usually just serve it along side. for the kale I boil a little chicken/veg stock, like 1/2 a cup or so, and add garlic, then kale and cook for a few minutes.
