Any Ideas for Good Vegetarian Crock Pot Recipes?

I have just become obsessed with my crock pot again. Life gets busier and I want to avoid eating out, and most of my energy is early morning or late at night but NOT around dinner time.

I have a delicious smelling garbanzo curry going in there right now. But I am wondering if anyone has some more delicious slow cooker ideas?

I was checking this thread to suggest garbanzo curry, yumm!
I like making lentil/split pea anything in my crockpot, it makes me feel good to cook dried beans but I don't have enough forethought to presoak.
Red lentil or split pea dhal with; curry paste or powder, fried onions, toasted mustard seeds, carots and spinach.
A nice brown lentil stew with a veggie broth base and winter vegetables.
Sometimes I make things in it that don't really need to be slow cooked (spaghetti sauce, quick chili) because it is really nice to come home to a ready and warm meal some days.

There is a great book called Fresh from the Vegetarian Slow Cooker. My family will eat just about anything from that cookbook.

Apart from that I literally just throw whatever I have in there- some sautéed veggies, beans or tempeh or tofu, and a little liquid (canned tomatoes, coconut milk, veggie broth) and curry paste or a handful of various herbs and spices and cook it up together.

We cook in there so often that we got a second crockpot- one for cooking dinner and one for cooking beans for dinner tomorrow.

Glad to hear a positive review about that cookbook. I was debating buying a slow cooker book and that seemed to be the one to get the best reviews but some of the vegetarian slow cooker books had such terrible reviews that I was afraid they would all be useless. I may just pick up a copy of the one you recommend!

Indian food - curried grams. Also, tough greens, like kale and collards.

Winter kale, white bean, and potato stew would be a winner.

Fresh From the Vegetarian Slow Cooker is one of the two books I use more than anything else. I love it. My omni husband loves the Slow Cooked Baked Ziti.

I love that book! Actually I love all the cookbooks by Robin Robertson, they are my absolute favorites. She seems to come out with a new one every year.

She has a new one called Quick-Fix Vegetarian which is all quick meals, but there is a slow cooker chapter since they only require a short prep time.

I don't have money to buy the book so if anyone wants to post their fav. recipes, I would appreciate it! I have NO sense in the kitchen, so if someone tells me to make Chili or soup I am clueless without direction.

Posting/copying recipes from a book is a violation of copyright law, so we can't do that. You could try to get the book from the library, though.

There's also a HUGE (like, 10 pages long) crockpot thread on this forum (if oyu do a search it will come up) although not all the recipes there are vegetarian. Also www.justslowcooking.com has a bunch of recipes, although again not all veg.

Thanks for the link to that site! There are so many great vegetarian recipes on there! I found a way to get only the no-meat ones to come up, which is perfect!
