is this a wheat allergy?

My son is 4.5 and I have always thought he was allergic to dairy, and that it caused behavioral problems and bedwetting. He was vegan until around 2 so I didn't figure the dairy thing out (or thought I figured it out) until 2.5-3. Anyway, he doesn't eat dairy very often now (although I can't bring myself to deny him bday cake at parties, which may or may not have dairy) and still has the same issues. A couple of weeks ago, we had wheat gluten "ribs" for dinner and he peed FOUR times that night! So I thought, maybe he is allergic to wheat. I cut it out a week ago and he's been well-behaved and dry all night.

Do you think that he is allergic to wheat or could it be a coincidence?

If he is allergic to wheat, does that mean he isn't allergic to dairy?

I don't eat dairy but if he can't have wheat, I need to come up with SOMETHING to feed him besides rice! We don't usually eat any meat, although he occasionally eats chicken or turkey. I bake all of our bread and he is used to having homemade whole wheat bread at least one meal a day. We eat a lot of whole wheat pasta, too. Is there someplace with lots of EASY wheat-free meal ideas? Or an easy wheat-free bread recipe (the ones I found have 10+ ingredients)?

The pasta is a fairly easy one to replace. You can use rice pasta instead. I think the best one is Tinkyada.

Since you make all your own breads, there are wheat/gluten-free flour mixes out there. I like to use 1/3 tapioca flour/starch, 2/3 rice flour in place of one cup of regular flour for my recipes. If you are just thickening something, you can just do the rice flour. I can hardly tell a difference in my recipes. I haven't used it to make regular bread yet though. Only for banana bread, pancakes, etc. I just used my regular recipes(so I knew we liked them) and made any substitutions needed.
