JElaineb posted this Buttermilk soaked bread recipe the other day. I tried it and it worked out really well! I wanted to post it again (and thank her!) because I have also tried it dairy free with good results. Just in case anyone could use the variation. I just substituted the buttermilk for an equal amount of water and put in two tblsp lemon juice.

Oh, and I don't have a bread machine. This recipe turns out well when done by hand too.

Buttermilk Honey Whole Wheat Bread
Bread Machine Recipe

14 oz. whole wheat flour (approx. 3 cups freshly ground)
1.5 cups buttermilk
1.5 tablespoons olive oil
3 tablespoons honey
1.25 teaspoons sea salt
0.5 teaspoons baking soda
3 tablespoons gluten
up to 1 cup additional flour (3.3-4.4 oz.) - sprouted
2.25 teaspoons (1 packet) bread machine yeast

1) Mix whole wheat flour and buttermilk. Cover and let rest in warm place for 12-24 hours.

2) Add olive oil and honey to bread machine. Add soaked flour mixture. Add salt, baking soda, gluten and approx. 1/2 cup extra flour. Make a well in top of dry ingredients and add yeast.

3) Set bread machine for quick loaf, light crust. Check during mixing phase and add additional flour if needed to make a springy dough.

4) Remove from bread machine, let cool and eat.

Thanks for posting this again! I was having trouble finding a soaked recipe that would work in a bread machine, so this is great to see!
