I'm rendering duck fat and have been pulling the fat off the top and putting it in quart jars. One of the jars has formed disitinctive layers. There's a bottom layer that is an opaque white and a top layer that is clear yellow. The other jars are all clear yellow. Anybody have any idea what this is or what's causing it?
