carbs in rejuvelac?

I'm going low-carb for a little while to bust off a few remaining preg/BF pounds... I'm drinking rejuvelac instead of milk because it seems like it would be practically zero carbs. After all, it's just the water the rye was soaked in, not the rye itself, right? Plus, it's VERY tart. However, when I googled it, I read a description of all the wonderful nutrients it contains, which said it was a rich source of CARBOHYDRATES, protein, etc. This doesn't seem possible.... does anyone know if rejuvelac has carbs in it?

I don't know anything about rejuvelac, but rice milk has a ton of carbs, so maybe it's along the same lines? Maybe you could try making cabbage rejuvelac--that shouldn't have hardly any carbs in it.

Don't you blend the actual rice in the rice milk? That would account for it beng high in carbs. (BTW, thanks for replying In rejuvelac, the rye or wheat is removed, leaving just the fermenting water. It's a totally clear, very sour, drink. I can imagine a tiny amount of starch or sugar could leach out of the grains into the water (which would then be consumed by all the bacteria), but it seems that it would be negligible. It's so hard to find nutritional info on obscure foods!

I think that there would be *some* carbs in the water as well as some alcohol, but I don't think it would be enough to make a difference in a low carb diet. Of course I have NO basis for this other than just thinking about it
