Protecting/refinishing butcher block table

What is the best way to refinish and protect our butcher block table? My dad has had it since I was very young. We just brought it home and lightly sanded it down, and put a layer of mineral oil on it. But, I'm wondering if that is all I need to do to protect it? I don't want to cover it in a table cloth nor do I want to use harmful varnishes on it, but I want to make sure it is going to be able to stand up to being used daily again. (We used it daily when I was young ... but when my mom sold the house to my dad, he didn't seem to use the table nearly as often. Plus we seemed to always have a table cloth on it when I was young.) So ... is mineral oil all I need? Should I do multiple coats of it? Is there something else I can do? I've read somewhere about possibly mixing mineral oil and beeswax and applying that ... ideas?

I've always used linseed oil on wood, but I don't see why mineral oil wouldn't work. You're going to need more than one coat, though- maybe 2 or 3? Use elbow grease and a bit of scrubbing for regular cleaning, and re-oil periodically.
