Possible liver source...what would you do?

'Tis deer hunting season in wheat farming country. The local processor doesn't throw the livers and hearts in with the deer that he processes (you get your two big boxes of deer steak/burger/jerky/sausage, but no liver/heart). So I'm thinking that maybe he just chucks them? If so...what a source! Free-range venison livers/hearts!

Is there any reason why I should shun this possible source? I'm of the "it's too good to be true" mentality, but my pregnant brain cannot come up with any negatives (maybe I'm just craving liver?).

I say totally go for it. The butcher that processed our cow throws out all sorts of stuff usually, including most of the bones--and I asked for them and am PSYCHED.

I found out that my pastured chicken farmer keeps most of the livers and gizzards for her own family. In her mind, that's the most beneficial part. I had to talk her into letting me have a few pounds of it. And I paid as much for the liver as I did for the chicken! Here I thought I'd possibly get it for free...

So, I'm thinking if they're just being chucked, you're in. But also, they might be saved for someone...
