Quick raw milk yogurt question - it's culturing right now!

I'm making raw milk yogurt with milk that I picked up one week ago. Is this dangerous, or will it be fine? I usually use really fresh raw milk, but I haven't been able to get to it for a week lol Should I be nervous, or not?

I hardly ever use really fresh milk. I think mine is usually a few days to a week or a bit longer.

I wouldn't worry at all.

Thank you!! I'll hope for the best Another quick question - is the acidophilus bacteria actually able to overpower the "regular, good" bacteria in rwa milk yogurt culturing? I wonder if this is why there are such mixed success results. Maybe sometimes the acidophilus is beat out by the regular souring bateria in the milk?
