Great Northern Beans soaking what would you make?

What would you make?

I have a funeral potluck tomorrow. I am thinking possibly white chili (which I have never made) or baked beans.

Oh, please post a recipe if you have a favorite

Bean soup!

Carrots, potatoes, celery, onion, mash a few beans after cooking to thicken it up a bit, maybe toss in some bacon, if you would like, or some fresh chopped rosemary....

Yeah I'd make a soup/stew. I'm kind of a minimalist as far as ingredients go though.

* cook beans until done
* sautee some onions (i do it in butter), add beans and their cooking water
* add salt, a small can of tomato sauce, spices (mostly paprika and cumin in my case, sometimes a little fennel). i've been adding a small piece of a smoked chili pepper and it adds a lovely smoky taste.
* simmer until all the flavors are blended

this is great when it's warm but it's also awesome reheated. the flavors blend so nicely.

I ended up taking something else to the potluck

I am making soup out of the beans though That sounds good and I had started cooking them in some stock before I got back on here, so I just addded more stock and am going to add some veggies. I had added a couple bay leaves, garlic cloves, and some oregano when I started cooking them and they are already really yummy.
