quick help needed! (soaking steel cut oats)

Help! I soaked some steel cut oats overnight, in whole raw milk, sitting out on the countertop. This morning I see the oats have expanded to soak up most, but not all, of the milk. I'm not sure how to proceed now to cook them. Do I drain off the rest of the soaking milk and then boil the oats in water, as usual? Or what?

If anyone sees this and can give me a quick reply, I'd really appreciate it. (Daughter is impatiently waiting to eat oatmeal!) :-)

Thanks,
Iris

personally, I would go ahead and cook the oats with the milk still there. When I soak over night in water, there is usually a few tablespoons or so of water left, and I just go ahead and toss it in! Might take a minute or 2 longer to cook with the extra milk, but it should be ok, maybe a bit creamier!

hth!

Thanks so much. That worked great -- the steel cut oats cooked up really fast, and on just a low simmer. Much nicer than waiting half an hour for them to cook. I'm a convert...I will definitely do soaked oats again!

i'm not sure why they taste so much better than rolled oats, but they do!
