Can We Talk About Sugar/Milk? And Enzymes?

It seems like we became sensitive to sugar overnight (a couple months ago). I'm starting to see some definition about what we do/don't react to and here's what I've come up with:
sugar-bad
organic sugar-bad
organic turbinado-bad
organic evaporated cane juice-bad
organic dehydrated cane juice-good
raw honey-good

And that got me thinking because we're having dairy problems too.
cow milk-bad
cow cheese-bad
organic live cow yogurt-good
organic live cow sour cream-good
raw goat milk-good

So my analysis is that we must be short on enzymes, if the rawest kinds of milk and sugar are passable. Therefore we're not allergic? Does this sound like faulty logic to you?

Not eating enough raw food can lead to all kinds of digestive and whole body illness.

However, since I know digestive enzymes don't work on IgE mediated allergies (source: Dr. Devin Houston et al) that might not be the whole story.

And sugar, even whole foods sugar to excess, can greatly upset your body's chemistry, including enzymes and minerals. So if you are already deficient in enzymes or minerals, sugar's gonna make the problem that much worse.

Well I don't think our problem has been related to eating too much sweet or processed food- at this point we can't even tolerate a biteful of something that's off limits. (Two quarter sized pieces of kimchee with my dinner made my daughter miserable for 36 hours) And wheat is especially bad for us. I truly believe that raw food is better in the big picture for a hundred different reasons, but isn't it easier for your gut to heal in the presence of cooked foods? Maybe our bodies are trying so hard to heal right now that they won't stand for sugar because it tears down our hard work. Maybe you can answer this question for me: my daughter seems to tolerate dairy-based probiotic powder fine, but am I risking keeping her sensitized by feeding it to her? Or does the benefit outweigh the risk? WWYD?

Some cooked foods are easier on gut: fruits and veggies for example. But I think others are better tolerated and digested raw because of the presence of enzymes: proteins, milk/yogurt, nuts (if soaked first to remove enzyme inhibitors). It really is individual trial and error.

I think the sugar problem is related to gut flora balance and inflammation in small intestine that prevents the body from producing enough enzymes breaking down the disaccharide bonds. Try honey, it doesn't have to be broken down.

I have read that dairy based probiotics (Elizabeth Lipski, PhD in clinical nutrition) can help a child tolerate dairy IF the probiotic is well tolerated. However, if I was going off of dairy b/c of sensitivity or allergy, I would do a non dairy probiotic.

Thanks Jane. I've come across alot of your posts along the way in my search for answers. I believe you're on the right track. Thanks for spreading the word. I'm pretty sure (now) that I've been wheat intolerant for a long time, maybe even 20 years but with few recognizable symptoms. Enter pregnancy hormones and my body shifted. Then enter Cesarean and abx. So I think the wheat intolerance probably has me lactose intolerant and gut leaking. And my little girl is reaping my ignorance. But we're on the road to healing, however long and steep it may be. My baby looks great on our gluten/sugar/cow dairy/sulfite free diet plus glutamine and probiotics and CLO. And I'm starting to feel better. Thanks for your help. You've definitely been instrumental to our progress.
