Welcome, everyone!

To soak beans, I follow Gale Force's method:

The acid thing never worked for me but I soak mine in the crock pot on Low with the lid off. It gets to about 130F and they're *perfect* soaked like that for 8+ hours.

Speaking of beans and crocks, I just picked up this crock at a thrift store. I know it's a vintage 60's bean pot that came with an electric hot plate for it to sit on, but I am wondering if the glaze is safe. I'd like to use it for fermenting. Does anyone know if there's any way to find out if the glaze is leaded or not?

I always wonder about that and I always chicken out because I'm worried about the glazes. Is there a manufacturer you could call?

It's a West Bend and their site has no info about it, there is a customer service # I could try. I also found this lead testing kit that could detect lead in household products of all kinds, might be good to have but I'm balking at the price... cuz I'm *thrifty*

That's an excellent idea. I know about being thrifty but still, even combined with the lead test kit, it'd be cheaper than a custom made crock.

I've been noticing that they've changed the smileys around...

I *must* cook up some chicken livers tomorrow. They've been hiding in the freezer for a while, and my mood has been really sinking this past month. I've also got a sponge going tonight, so I'll be baking bread tomorrow (the no-knead recipe - I've yet to revive my sourdough starter...).

My confession is I made pasta for dinner, though at least the sauce wasn't too bad (raw milk, raw cheese, smoked salmon, peas, onion, garlic...).

Haven't been doing much the past few days, too much running around and not being home + having a cold. This stuff really does take time, I notice a few days a week I spend nearly the whole day in the kitchen. Is that about right or am I doing it wrong.

I enjoy it though, especially when I don't feel like cooking and there's healthy stuff to throw together already available.

Got my rear in gear today and have coconut milk yogurt going, stocked the freezer with homemade enchilada sauce based on the broth I did last week... and I also made up pizza crust mix to have on hand - not truly a TF recipe though, anyone have a good reliable and tasty TF pizza dough recipe? I have been using the recipe from The Bread Bible. Maybe I could convert it somehow?

I was looking into making my own bbq sauce cuz the one we love is full of hfcs, it's the second ingredient listed, ack! NT has one... a mix of the teriyaki sauce, ketchup and fish sauce, none of which I have made yet. I'd be ok with a TF friendly but not fermented recipe.

Because it has a red glaze from the 60's I'd be leary. Red is very common color that lead is used in the glazes. Even stuff made now from China if its red or yellow will have lead in the glaze.

My mom always made bbq sauce from diced onions, ketchup (organic w/out consyrup would be TF) and vinegar - then she would cook it down a little - not exactly TF there, but it turns out thick. The spice is from the vinegar, so you add more depending on how much of a kick you want...

That sounds good, my mom made a great sweet-n-sour bbq type sauce with ketchup, pineapple juice vinegar and brown sugar.... the thing is, my dh is um, particular about his favorite bbq sauce and tends to be cool towards others that don't 'taste right' although I love a sweeter richer sauce. I'm hoping I can come up with something that is closer in flavor to his lighter, less sweet, smoky bbq favorite.

Hiya, can I join this thread? I've slipped some here lately, we're remodeling my kitchen so cooking without a kitchen sink is near impossible. Maybe we'll get the new one finished next week.

My DH is gaining weight, and he knows it, so therefore he's determined to eat worse than ever.
I'm gonna yank my hair out! Yesterday he bought some kind of chip-dip from the store, the second ingredient was hydrogenated oil of some kind so he yanked it away from me before I could say anything, proceded to eat the entire can with a bag of chips in one sitting (at his computer) instead of eating good food in the fridge.

Aside from totally banning him from buying food, I can't figure out what to do!! I cook the good stuff, and he says he's "tired of restraunt food, can we just have hot dogs?" so I made a compromise, homeade chili mac instead of hamburger helper crap. Sigh.

If I say "we're not gonna eat x, y or z in this house, he gets all sourpuss on me, like I'm too controling I guess. So the compromise was one or two junk food items per 2 weeks, but now I guess that's not good enough? We have to buy chips (which I thought would be ok with sandwiches, but noooo he hogged them all in one sitting!) and chip-dip, and Dr Pepper and Subway, and Taco Bell!! Give an inch and he takes a mile! I swear, the man is nothing more than a spoiled 2 year old.

I have one of those husbands. We compromise, a lot.

I've been slipping again lately. Being iced in was hard on me. PMS is hard on me. Ok, now I'm just whining.

Yeah, the holidays are hard. All people do is eat junk around this time of year.

I just went on a conference, and had to eat at a restaurant for every meal for 5 days. I feel like POO, and I know DH was eating crappy old pre-TF leftovers all week.

I'm going to take a nap this afternoon after work and then get down to business.

Not so great this weekend! I didn't take my own advice and ended up eating out a couple times. I tried to choose the best of what was available and ended up with mahi tacos & refried beans one time, chicken breast strips and fruit another. Had a day long stomach ache to show for it. I remember last year when I was doing a few TF things on a regular basis, fast food upset my tummy then too. Anyone else find this effect happening?

I really need to get back into the habit of making bread at least a couple times a week; it's easiest to take along a sandwich.

Hopefully after the holidays our budget will relax, and the biodad will continue to make child support payments, ugh. If I have to rely on my dh for grocery funds, we end up not doing any TF because I try to keep the cost down... we still do whole foods though.

I tried a smoothie recipe someone posted, we did apple,cantaloupe and kale with apple kefir & coconut milk yogurt... we froze it into popsicles. Ds seemed to enjoy them though I find it too cold to eat frozen stuff in the winter.

Also am making a second batch of soaked granola since ds liked the first so much...

I did almost nothing at all in the area of food prep over the weekend so I need to make yogurt, get bread sponge fermenting and put the granola in the oven to dry. And what I really feel like doing is crawling back into bed, my nursling is sleeping in this morning and I could've gotten some extra sleep! (joining Serena to whine, whine, whine, lol)

Ladies, I have completely fallen off the TF wagon. Whenever I'm in rehearsals for a play (I act as a hobby) I totally lose it, because I'm so busy I don't eat at home. I'm trying to hit the co-op deli as often as I can, or Chipotle (they are transparent about their meat sources, and have some organic produce) but it's still hard. Ack!!! I don't have solutions - I'm going on vacation for ten days and it'll all be out the window anyway - I'm just here to rant! Thanks for reading!

Reason number 110 to never run out of stock: you will get sick once in a while, and DH's idea of "taking care of you" means cooking Ramen noodles for you.

I have gained a couple of lbs lately. Not happy about the way my jeans are fitting. Why oh why does it have to be so hard around the holidays? I always go into the holidays thinking that I can manage but with all the parties and the festivities I get so off track. I have determined that January 1st I am going back on track cold turkey. No more ice cream, no more chips, no more cookies, no more brownies, no more lunchmeat, no more cereals.....etc.

I am planning to stock up on good stuff this week.

baking off my sourdough bread today
made some KILLER chicken stock last week and awesome soup.
Getting back into the raw milk
Going to locate some kefir grains to make my own
Doing more oatmeal breakfasts (my milk supply is dwindling )
