So I have a friend with celiac's disease (or whatever its called) and I wanted to make some Christmas baking for her. Do gingerbread or sugar cookies taste ok with rice flour, or do I need to make another adjustment to have them work? If this is the wrong forum, I'm sorry.

You need to use a mix of flours to replace the flour. The most common is rice/tapicoa/potato starch used with xantham gum. That being said a nicer thing to do is NOT to bake for her at all. In order the pull this off you really need to be familiar with the diet/cross contaminnation/etc. She probably is very concerned about this and wouldn't want to eat anything made in someone else's kitchen anyway.
What I would suggest is finding some fun naturally (as long as you check your ingredients) gluten free recipes like fudge, chocolate with colored marshmallows, magic cookie bars, different kinds of chocolates and suggesting baking them with her at her house.
Or do your original idea but bake together at her house.
Nice and thoughtful of you though. Good Luck.
