I've made this before with whey and it was divine but now that I'm dairy free I was hoping to try it without whey. Does anyone know whether it would work? Somewhere in the back of my mind I think I remember rreading in NT that veggies can be lactofermented without whey but that fruits need whey. So does that mean this won't work? We suddenly have a surplus of lemons and limes and I'm dying to make it again.
