Food allergy/sensitivity timeline

How long after the mom eats something allergenic will the baby show symptoms? Hours? Minutes? Days?

I ask because most days James only cries when he's hungry, needs a diaper change, or a burp, but every few days he just loses it and gets really gassy, fussy, etc. It doesn't seem to be at any particular time, so I was thinking maybe it was something I'm eating, but I'm not sure when to pay attention to the foods I'm eating.

It's not serious enough now to do an elimination diet (ok, and it's Christmas cookie season, so I'd really rather not start out with that . I'm just curious as to timelines to see if maybe this is a cause of some of his fussiness.

Then again, maybe he just enjoys a good meltdown every 3-4 days. This newborn parenting stuff is so confusing - he really should have come with an owner's manual!

I was going to post this too because it happens very quickly. I would say maybe an hour? Sometimes it seems like within minutes, but I know it must be longer.
