need potato recipies...

I have potatoes to use up...any ideas besides mashed potatoes, homemade oven fries, potato soup, or potato pancakes???

I have a really good, not terribly healthy recipe for scalloped potatoes. Oh and I don't measure, so its not exact.

cream of chicken soup
sour cream
potatoes
onions
butter
cheese

Peel, slice and boil potatoes until they're almost done. Mix butter and cream of chicken and microwave until bubbly. Add sour cream, onions, cheese and microwave again until its all melty. Pour over the potatoes, top with cheese and bake at 350 until bubbly. Top with paprika.

eggs & potatos.

Dice potatos, pan fry in a bit of oil / butter / whatever. (add onion in if you like). When potatos are mostly done, dump egg on top. Scramble or do omlet style.

Use them as a crust for quiche

My girls both LOVE what we call "the potato broccoli thing"....

Baked potatoes, mushed up in the skin with some butter/salt/pepper...top with steamed broccoli...cover with cheese (we use grated monterey jack)...put back in oven for a few minutes to melt cheese...then top with ranch dressing and enjoy. We have that for dinner all the time.

If I have lots of taters (which is common, I LOVE potatos) I usually make a large potato salad. Love it!

We just had scalloped potatoes for the holiday and it was an excellent recipe from Cook's Illustrated. Very simple -

simmer 1/8" slices of potatoes (think I used about 10?) in a pot with 3c. cream and 1c. milk, several sprigs of thyme and a couple of bay leaves. Add a clove of crushed garlic. When potatoes are getting to firm tender, transfer into baking dish, sprinkle with cheese of your choice and finish in the oven about 20-25 min. Makes awesome leftovers too.
