What side dishes would you serve with stuffed pork roast?

Any thoughts? We're buying a raw, stuffed pork roast from our local (super-yummy) Italian specialty shop for Christmas dinner. :

Does anyone have any ideas for side-dishes?

(Applesauce is out. It makes DD constipated and I don't want to argue with her about food.)

Thanks!!

ETA: Post 15 has the stuffing ingredients I could remember!

This is a favorite meal of mine . Too bad about the applesauce - I love it with pork roast.

I have made this with carrots, frozen peas and roasted brussel sprouts. I think winter squash would go great too - either roasted, baked or mashed. And even though there's stuffing, I would still serve mashed potatoes.

Oh, almost forgot - sauerkraut goes great and works well as an alternative to the applesauce.

Good luck! Sounds yummy.

Thanks for the reply. I don't think the roast is stuffed with actual stuffing. I think it is cheese and ?. DH and I are trying to remember from a few years back.

Sauerkraut sounds yummy -- I think I have to call them tomorrow and find out exactly what the stuffing actually is

Ohh, that sounds so yummy. We had had this with lamb and I think it would be really good with pork too (my dh hates pork )

Cranberry apple relish recipe

1.5 cups cored and chopped Granny Smith Apples (or what ever you have)
1 12oz package fresh cranberries
1 cup packed brown sugar
1/2 cup white grape juice (I often have pear juice on hand and use it instead - what every you want)
1 tsp ground ginger
1 tsp cinnamon

Combine all ingredients in a large heavy duty sauce pan, bring to a biol, reduce to low and simmer for approx 15 min, until thick - serve hot or cold!

Easy and super yummy, we eat it alot! (you can also sub crisp pears for the apples)

DD has apple issues, so we have pear juice too! Do you think pear and pear juice would be overkill?

Thanks for the recipe -- it sounds REALLY yummy!

Creamed peas and potatoes
Green salad and/or cooked greens of some sort

You didn't specify how many people, but for 4-6, I'd stick with that. If you have more than 6, I'd add 1 more dish for every 2 people. But then I'm insane that way.

I'm missing all sorts of info today, sorry!

There will be 8 adults and one 2.5 year old.
Thanks!

We will definitely have a salad - mixed greens and tomatoes.

Yum! Raw sounds easy too!

Think it will work in a blender? We don't have a processor.

My oldest dd can't have apples either. I have done pear juice, but did not like it as well, I have used grape juice, but my favorite is cranberry or the other day I use cranberry/pomegranate and it was really good.

Yeah, I was thinking of roasted items too -- maybe cauliflower with peppers?

Thanks!

What is the stuffing made of?

What about fresh green beans, just lightly steamed with slivered almonds?

OK, the pork is stuffed with roasted peppers, salt & pepper, cheese, sun-dried tomatoes, some breadcrumbs, and ACK! something else I don't remember now

So, it leans toward the Italian side
