mmmmmmmmm

a thin slice of sheep's cheese, topped with a very very thick slab of cold sweet cream butter

pork belly (fresh side to Americans), roasted and eaten with pork belly gravy

Egg nog - an egg, a splash of boiling water, something to sweeten, nutmeg and a large blob of fat of your choice all in the blender

chocolate - coconut oil, coconut cream, cocoa butter, cocoa, sweetner or choice, nuts optional, all in the blender

"sweet and sour" pork belly. Slow cook the pork belly with some sugar (not much needed) and white vinegar and water, cook it right down and thicken with a little non wheat starch eg: arrowroot, rice flour, potato etc.

crackings from rendering my own lard or tallow

hollandaise sauce on scrambled egg (or anythign else)

Fatty ground beef cooked with berbere, mix in a little butter and eat either alone with some sheep's yogurt to cut the spice, or with some injera

skirt steak

paprika schnitzel - fry your pork loin into schnitzles, in lard of course, then add plenty of paprika to the pan. Pour cream in and cook until slightly thickened, salt and pepper to taste, add some non wheat starch to make it thicker if you want. Serve with Kloese (potato dumpling) or other starch.

macadamia nuts

Gotta stop.
I'm on a diet.
Dreaming of delicous healthy fat.

You know how when you make chicken bone broth that you get a layer of fat?

I let my broth sit in the fridge for a couple of days after taking the bones out so that the broth can congeal and the fat rises to the top. Then, I skim that fat off and then melt the fat over low heat and then pour it into a jar and store in the fridge. If you use bouquet garni when making the bone broth the fat then smells heavenly.

That fat makes the most divine refried beans. Warm the fat in a pan and then add the cooked beans and smash. Add salt. Serve with grated cheese that will melt on top.

I also use the chicken fat to make fried rice. That also comes out unbelievably good.

The first thing that popped into my mind was half an avocado stuffed with egg salad.

Deviled eggs

I'll second the homemade cracklings... they don't have to be pork. Chicken works, too.

Egg custards made with cream
Homemade ice cream made with cream
Yogurt made with cream

Cheese crackers (shredded cheese melted into crackers)

One of my traditional foods... blini (yeast pancakes) or blinchiki (crepes) with melted butter and sour cream (you can add any fish to that if you like, my dad eats it with smoked salmon or kippers, I just like it plain)

How about coconut candy... coconut oil, honey and whatever you want to mix into it (dried fruit, nuts, shredded coconut, cocoa powder, etc.), spooned onto parchment and refrigerated until set.

Would you be interested in a recipe with chicken, butter and sour cream? It's a family favorite over here:

take 8 chicken thighs lay them in a 9X14 pan or larger. Spread a pint of sour cream over them.

Melt 1 stick of butter and pour it over a small package of seaoned stuffing mix (I use pepperidge farm) mix well and spread over chicken and sour cream.

Cover and bake at 350 for 45 minutes, remove foil and bake for another 15 minutes.

This stuff is too yummy for words, I personally try not to think about the amount of fat though.

Chocolate pudding. Chuck avocado, cocoa powder, and your sweetener of choice into a food processor. You can also add fatty mix-ins like coconut oil/cream.

For each custard:
2 eggs, 1/2 c cream, 2 Tbsp honey, vanilla extract/fruit/nuts

Pour it all into a heat safe bowl. Place bowl in a cold water bath. Bake at 300 about 1 hour, or until set.

I usually make 6 or 8 at a time, they keep a week easily.

Yum!
I also use this fat in beans. It adds so much flavor!
I also put a scoop in when I make hummus.

The fattiest snack I eat regularly has to be sliced raw sheep's cheese slathered in homemade EVOO mayonnaise. :

This thread is making me want to BARF! Yuck! I guess I have been on WW for tooo long! I give my small DS whole fat dairy and I put coconut oil in his food. That is my way of fattening. Some children are small, and when a child is small we see that as rare due to most people being FAT. Anyway.... on with the fatty foods.LOL

Ok this has grains but I don't see why you couldn't leave them out if you wanted....We make a nice fatty dish that doesn't really have a name. It throws together fast with leftovers.

2c. of your grain of choice, cooked in bone broth
1.5c of your cooked meat of choice, can be leftovers (better flavor if you cube & brown it in butter, bacon fat or coconut oil first, maybe with diced onion/garlic/whatever)
2c grated strong cheese, I like cheddar
3 eggs, beaten
handful of parmesan cheese

mix all in a large bowl and season as desired

bake at 350F for about 45 min or til deep golden brown

Clofuti. We use coconut milk instead of dairy, due to allergies. http://www.cooks.com/rec/doc/0,1813,...228196,00.html You can use cream or equivilant instead of the milk, and any flour will work. OF course, we leave off the powdered sugar.
