I also posted in the main forum, but I need more recipes.

I am hoping to make my dad up a basket of seasonings for jerky and smoked fish for Christmas. He does a lot of dehydrating of steelhead and of game meats as well as some beef. He buys mixes that are fully of yucky ingredients so I would like to make him an alternative.
