Baking Soda

Why doesn't NT use baking soda? I want to make cookies and I am subbing all the bad ingredients for "good" ones. Soaking my flour using rapadura... what about the baking soda... what do you sub for that? Or do you just use it?
THANKS!

I've never noticed that they don't use it, but you CAN get aluminum free baking soda from Bob's Red Mill.

Does anyone know if Frontier's baking soda is aluminum free?

I've never heard of aluminum in baking soda... it's generally in baking powder. Baking soda should be a pure bicarbonate of soda, baking powder is a blend of ingredients.

Yeah, I didn't know they used it in baking soda either until recently. I guess for an anti-caking agent. I don't know if all mainstream brands do, but after I found out I tried a regular brand in water and could totally taste an aluminum after taste.
My taste buds are pretty sensitive to aluminum though, I can taste it in tin canned goods, too.
So, I've been on the search for aluminum-free since then, and so far I've only found Bob's. I want to find out about Frontier's though.
