Is there a way to make TF grade fresh pasta? I hate the way dried pasta tastes but would be willing to try to make some TF pasta. Anyone have any ideas? I've never made pasta, but my family loves it and I'm really trying to fully transition us to TF.

What grains do you have to work with? Gluten grains work best.

3 c of flour + 2 eggs and enough water to get the proper consistency is all it really takes. Do you have a pasta roller or will you be rolling it by hand? If you're rolling it by hand, then you should probably knead it a bit first. With a pasta roller, it does the kneading for you.

oh yay! i've been meaning to ask this question...my son is addicted to pasta and i'd like to find a more TF way...cristeen...would you do the whole "soak the flour" the night before and then add eggs? in that case...how much water? help the pasta-challenged!

In that case skip the water entirely. Really I usually only add a Tbs or two of water at most.

so you're saying mix the flour and egg and let that sit on the counter overnight? is it safe to leave an egg out like that or would i then let it sit in the fridge?

Oh, no... soak the flour first. Then add the egg. You just don't need any additional water with the egg, since the flour is already soaked.

I am getting ready to make some after christmas. I am getting the pasta attachment to my kitchenaid. I am going to use egg yolks and some sprouted flour so I wont have to soak it
