what are your thoughts on powdered egg whites? It seems so un-TF. And yet some of the recipes using them are intriguing. Do you use them?
By the way, it's a great book (especially if you're grain-free/dairy-free). I'm glad I went ahead and spent the 35 buck on it.

hey, i just bought this book and i, too, really like it.

i just don't get the egg white powders in the the recipes. i mean, paleo people didn't go to GNC and buy egg white protein powder! are you using any egg whites in your GOE recipes?

and maybe i have yet to read about this, but i don't see anything about fermented foods. perhaps this was a development during agriculture, and the authors of GOE didn't see a need for it. but with our depleted soils, wouldn't a few fermented foods help with bacteria, assimilation, etc. in our guts?

what are your favorite recipes in the book?

thanks for replying! overall i really like the cookbook. i've made the steak tartare (i never knew that it was made out of ground beef--my boys loved it). also the fluffy nut butters and tahini, and spaghetti squash. there are a bunch more i want to try. what are your favorites?
i don't know about the fermented foods thing. i make sauerkraut, though. i just thought it was strange that a book that was so into whole foods, organics, etc. would then advocate powdered egg whites. i didn't know if i was missing something or what. i have to admit, it would be nice to have a cheap, convenient source of protein like that for smoothies and the like. probably not so great for you, though.

ah - i asked the authors about this. they have since reconsidered their position on powdered egg whites and don't use it.

if you do want a good protein powder, i recommend Raw Power (http://www.rawpower.com) - i've used it a few times in the (raw) recipes that called for a protein powder. otherwise, i leave it out and toss in another egg or egg yolk (reduce other liquid accordingly).

So if I were to buy the book today, would the recipes still call for powdered egg whites, or has it been revised to reflect their new opinions?

no it doesn't show their new position nor have they added any info to their website - something i find quite frustrating.
