Oiling wood cutting boards...

I got a wood cutting board for Christmas and the label says to oil with mineral oil - I'm leary about using MO - is there a food grade oil I could use that won't go rancid?

I used MO because my directions said food grade oil would go rancid... so I'm going to keep an eye on this thread

I use lard, or coconut oil, or palm oil. Whatever I happen to grab first! All of them are edible parts of my kitchen. Olive oil dries out the wood and makes it crack.

I've always used olive oil and other food grade oil. Hey maybe food grade tung oil would be a good choice - it's a wood finishing product, so I can't imagine it would go rancid.
