GREAT pate. Highly recommended.
I'll have to try this recipe. I own that cookbook, but it is one of those I enjoy reading but haven't actually cooked from it much for some reason. I think the only recipe I have made from it is her scrambled tofu, which is really great.

Tonight I made "Farmhouse Fricassee" from Fresh From the Vegetarian Slow-Cooker. It is a yummy slow-cooked dish with seitan, green beans, potatoes, and baby carrots. Very hearty and filling and my picky 3-year old actually liked it!

Tomorrow night I am going to have to make something with broccoli: for once I have a ton. Probably roasted broccoli, and sweet & savory baked tofu and some sort of asian sesame noodle.

DH made dinner again tonight. We had leftover lentil/walnut burgers from Moosewood (love, love, love these), veggies and homemade baba ghanoush, and pomegranate.

I had three food related resolutions this year- to spend less on groceries, to eat at least three vegan meals a week, and to bake more so that we eat less (expensive) junk food outside the house.

Today toddler and I made roasted garlic marinara sauce (tripe batch to freeze 6 heads of garlic went into that pot) and for dinner we used half of that to make a big pan of lasagna (and froze half. I really meant to put spinach in the lasagna, but forgot

I made the cashew ricotta from Veganomicon and it was goooooooood

For dessert, we had leftover cinnamon streusel that I made for New Year's brunch.

It's turtle's go-to cookbook. She loves it.

If any of you are interested, I'm hosting a reverse local food swap.

Last night was my night to cook and I made black bean and lime chili (the recipe's over in the pantry challenge, if anyone wants it).

Tonight I'm trying some recipes from ED&BV - walnut, white bean and spinach phyllo rolls and also cranapple quinoa pilaf. (I think that's what they are called.)

Cool. If you can, could you post any of her favorite recipes from it? I think that book is just so huge that I have never known where to start cooking from it.

For dinner tonight, we had vegi fried rice from the recent Vegetarian Times. Very good!

I'm in the process of making whole wheat English muffins, which we'll eat with some honey in a little while for dessert.

We had Chickpea Cutlets from Veganomicon and green beans.

I sauteed tons of onions and garlic in EVOO, added diced tomatoes, S&P, oregano, basil, and red pepper flakes, corn, and chickpeas I pulsed in the food processor for a few seconds. Put it over whole wheat spaghetti. The chick peas made it really creamy and gooood. We had it with a green salad (apparently no dinner at my house is complete without one).

Oh, and soy hot chocolate. We went tobogganing before dinner and Anna (sorry! - Santa, as she insisted we call her) was cold.

Wow, frog, thank you! I will get some post-its and make notes on the recipes to try.

Tonight was roasted broccoli, sweet & savory baked tofu and sesame-soy noodles.

My 3 year old loves the tofu & so do I. So simple & good.

We always do a bunch of appetizers on New Years Eve, and then pick at whatever is left for New Years Day dinner. This year I did a vegan antipasto platter (a huge hit with dh!), and various vegan dips, pates, and crackers.
