What TV CHef is the Most TF??

I love watching FOOD TV and the like, but since starting TF, I feel limited...
For me only two chefs come to mind:
Alton Brown - because he is science based
and
Paula Deen - because she is not afraid of FAT
any others??
These are the kind of things that I ponder late at night...:

I like Barefoot Contessa, although she does use refined flour and refined sugar. But she makes a lot of high fat and yummy foods and stresses good ingredients.

The woman who won the Next Food Network Star used those fermented and salted Moroccan lemons the time I watched her. Her show is something like The Gourmet Next Door.

Watch them for their techniques

I like to watch Amy Finely and Ina Garten. They have some excellent techniques and sometimes I make their recipes but mostly I just watch. No one is completely WAP but I can take any recipe and prepare the grains, flour, or nuts the WAP way and then do the rest the "TV" way.

The other night there was an Iron Chef America where the secret ingredient was Rabbit -- the new Iron Chef -- Simons? used every part of the rabbit -- he cut up tiny little rabbit livers and put them into risotto, and used the rabbit legs and the regular meat, I think he even used the kidneys. That's kind of TF -- using the whole animal. I just like to watch Food Network, even if I won't make the stuff or can't eat it! It gives great ideas to work into our menus.

I was just thinking the other day how cool it would be if there were a totally TF cooking show on Food Network!

Of course, I'm picturing someone trying to host a show like that and deal with the various time frames involved in "slow food" cooking. That would be tricky.

DH and I were joking that for two or three days in a row, the entire show could just be a camera focused on a pot of simmering soup stock while Sally Fallon's voice in the background explains the nutritional benefits of bone broth and reads selected quotes from NT.

You should send the idea to the Food Network! All the food shows have the pot they're cooking plus the pot in the oven that's already cooked so it wouldn't be that different. You just show a clock moving around -- 72 hours later.... but making pie crusts out of ground nuts.... different ways to make liver appetizing... going to farms to show pastured beef/pork... what a fantastic idea! That chef could even bring something to the Thanksgiving Special dinner that's actually HEALTHY!

Can you imagine all the legal disclaimers they would have to have on a truly TF Food Network show?

Let's picture the TF chef whipping up a smoothie...

And who would sponsor a show like that? All the processed food manufacturers would hate it.

But it sure would be COOL.

My dad totally suggested that I do a show like that! Hehehe... He really wants me to teach Kombucha and all that on the food network! Man, I WOULD LOVE THAT! I think it would be totally awesome! But, you are right.. who would sponsor that?

Mario Batali is pretty TF (except for when he used white flour pasta)...he used to do a lot of real, authentic Italian dishes. But I think he is on the outs with the Food Network.

I like Martha Stewart. One time I heard a caller ask her opinion on the best nonstick pan and she answered "I never buy nonstick pans, just use a little butter"

OMG Paula Deen is, like, the OPPOSITE of TF!!! She uses pudding mix, vegetable shortening, store-bought chocolate sauce, all kinds of horrible things! I can't stand her. ugh. She's the epitomy of why the South has such appalling obesity rates. Being unafraid of fat isn't necessarily a good thing, if she's equally unafraid of things in packages and sugar.

Alton Brown is as close to TF as you can get on TV I think... he did lactofermented pickles in one episode (then ruined them by immersing them in KoolAid ) and I just saw an episode last night about milk where he totally poked fun at the anti-raw-milk bureaucrats.

Funny this topic's come up though... we are cutting off the cable as soon as I remember to call the cable company. The only reason I was holding on to it was the Food Network, but lately I've been finding that I watch shows and just get kinda angry. I think I know too much to watch Food Network. It used to be I'd get annoyed at non-chefs like Rachael Ray and so on because I used to work in a restaurant kitchen and I'd be all "that's not the way to do that!" but now I'm annoyed at everyone because they either know bupkus about real nutrition or they're pandering to the advertisers. Sigh. The only show I kinda like still is Iron Chef (both manifestations) because it's just hard-core cooking. But then someone hauls out the sous-vide plastic and I get mad again.

Last night I couldn't sleep and turned on the TV sometime in the middle of the night, to the Food Network, and there was some chef guy holding up casings (from hog intestines, I assume) and showing a woman how to pipe a meat mixture into them to make their own homemade hot dogs!

I was too groggy to remember the name of the chef or the show. But it made me laugh because in my half awake/half asleep state I thought, "Hey, maybe the Food Network is turning TF after all...but only at night when noone watches!"

My current faves on FN are Alton Brown and Iron Chef (but I hear ya, Sarah/Spughy, on that sous-vide plastic)

Here's a new question: which FN show do you hate the most?

I really get annoyed by the one with Sarah someone (Sarah Lee?) called... shoot, I'm blanking on the name... something like Half Homemade... I know that's not it, help me out someone. But she uses a ton of processed/pre-made foods... shoot, now it's going to bug me and I'm going to have to go and look up the name of the show on the FN site.

ETA: Aha, I was close. It is "Semi-Homemade" with Sandra Lee. That's the show I hate the most. It's not even real cooking.

I only ever liked Mario Batali and Emeril. Emeril cooks much from scratch and you could get rid of whatever "junky" stuff her uses, but I've been to one if his restaurants and it IS just good food.

I think Mario Batali is very earthy and organic and cute. I'im not crazy about TV though, I'm just talking about their food.

I very much like Jamie Oliver. He did "The Naked Chef" awhile back. I remember him being pretty tf and natural. He has a new show starting today, "At home with Jamie Oliver". I hope it isn't just another dumb food show. I do like Mario Batali. Is he really on the "outs" with the Food Network? He is one of the iron chef though, right?

I would vote for Jamie Oliver or Mario Batali. Both are really committed to whole foods and not afraid of healthy fats. I am soooooo looking foward to Oliver's new show. I love his cooking and he is total eye candy to watch too!
