Our meal week started last Friday since we were out of town until Wednesday and I didn't get to the gorcery store until Thursday.
Friday- homemade split pea and ham soup (a new recipe and OMGoodness it was good!)
Saturday- DH was out of town for work, so I made beans and rice
Sunday- MIL had us over for dinner
Monday- parmesan baked chicken, whole wheat cous cous and steamed veggies
Tuesday- NY strip steaks (DH has been jonesing for steak lately), baked potatoes and steamed veggies
Wednesday- char siu pork roast in the crock pot, brown rice and steamed veggies.
Thursday -Tuesday of next week- out of town again.
Man, we are having a lot of steamed veggies this week!
As for leftover- my DH, toddler and myself eat the next day for our lunches. We like leftovers. So easy for lunches.
