My mother knows we are going through a rough time, financially, and so has been bringing her leftover food to us. Today she brought over a portion of a big pork roast that she had. It is probably around 3 pounds. I would just roast it, but we would eat it in one meal with enough leftovers for the next day's lunch. I would love to stretch this into three meals for my family of 5. Any ideas???
