Meal Plans for January 12-January 18

I'm going back to planning breakfasts and lunches again. I feel like I get too lost if I don't, and we end up eating crap cereal for breakfast and getting take-out for lunch.

My goal for this week is to stick to my plan all the way to the end of the week. I always do good up until Wednesday, then it all falls apart.

Saturday
B: homemade chocolate chip muffins
L: out (we'll be shopping--will try to get something reasonably healthy)
D: lasagna, corn, spinach salad, garlic bread

Sunday
B: baked French toast, fruit
L: leftover lasagna & corn
D: homemade sloppy joes & baked fries

Monday
B: sun-in-a-window, bacon
L: leftover lasagna & spinach salad
D: buttery baked chicken, Parmesan pasta, spinach salad

Tuesday
B: oatmeal with raisins, fruit
L: leftover lasagna & spinach salad
D: beef stroganoff, green beans, spinach salad, pistolettes

Wednesday
B: waffles & bacon
L: leftover beef stroganoff & spinach salad
D: chicken tortilla soup & pistolettes

Thursday
B: scrambled eggs & toast
L: leftover chicken tortilla soup
D: creamy Italian crockpot chicken over rice, stewed squash, lima beans, rolls

Friday
B: oatmeal, fruit
L: leftover Italian chicken over rice & squash
D: out

Saturday
B: bacon, egg, and cheese English muffin sandwiches
L: leftovers/clean out fridge

We grocery shop on Saturday afternoons. If you don't shop on Saturdays, please feel free to ignore the dates in the thread title.

12- breakfast: oatmeal and bagels
lunch: something at my Mom's
dinner:Roasted pork loin, potatoes, cauliflower
13- breakfast: eggs, toast, maybe bacon
lunch: chili
dinner:Meatloaf, mashed potatoes, corn
14- dinner at my mom's
15- Chicken sandwiches, some veggie, roasted potatoes
16- Leftovers
17- dinner at my Dad's
18- Hamburgers, fries, something else

We only do lunch and breakfasts on weekends. The kids eat those at daycare/school during the week and I eat leftovers or sandwiches.

I think I'm going to try to plan mine for the rest of the month to get shopping out of the way. It's so much harder with 2 kids!!

Oh and Lindsay do you have the recipe for the creamy Italian Crockpot Chicken? That sounds yummy.

It's not all together healthy, but here ya go:

Creamy Italian Crockpot Chicken

8 boneless, skinless chicken breast halves
1 pkg. dry Italian dressing mix
1/4 cup water
8 oz. pkg. of cream cheese, softened
1 can cream of chicken soup

Place chicken in greased slow cooker. Combine salad dressing a water; pour over chicken. Cover & cook on low 4-5 hours. In saucepan, combine cream cheese & soup. Heat slightly to melt cream cheese. Pour over chicken. Cover & cook 1 additional hour on low. Serve over pasta or rice.

I normally do penne or fettucine with this, but I'm going to try it with rice this time. I hate that it takes cream of chicken soup; I really need to start making my own "white sauce" to substitute for that junk.

Oh I can't picture the taste of italian dressing with cream of chicken soup? Weird! But you've had it before and it's good?

Well, it's dry Italian dressing mix, so it's not really the dressing (with the oil, etc.), just the spices that go into the dressing. I edited above to add the word "mix" just in case anyone else was confused!

Yep, it's VERY good. My picky kids & husband all like it.

just dinners for us

tomorrow is supposed to be fish but I don't have any. I have to see if I can get some tomorrow during the day

sunday - pancakes

Monday - tomato soup

Tuesday - enchiladas

wednesday - spagetti with meat sauce

Thursday - stir fried veggies with peanut butter noodles

friday - roast chicken

Hi! I don't post very often, but I'm trying to get back in the habit of meal planning. I don't assign specific nights to meals and lunches tend to be leftovers of the previous night's meals. I also tend to just put together sides/veggies each night, instead of planning them. Here are the meals I have planned for this week:

-Lentil loaf with mashed potatoes and veggie/salad
-Skillet stroganoff (with fake meat....fauxganoff?) and veggie
-Spinach feta pie and lemon roasted potatoes
-Sloppy lentils- a.k.a. veggie sloppy joes with french fries and veggie
-Black bean tacos with rice
-Crockpot chili or crockpot veggie/chickpea soup
-Thai green curry with tofu over jasmine rice

And two new dessert recipes to try:
-Crockpot chocolate pear cake (from Veg Times magazine)
-Orange poached pears over vanilla frozen yogurt

i think it's where you cut the hole out of the bread and cook the egg in it. we love them. we call them rocky mountain toast. my dad calls them gashouse eggs

i've also heard them called bird in a nest

Yep, that's it. Put butter in a skillet, cut an egg-yolk-sized hole in the middle of a slice of whole wheat bread, put the bread in the skillet, and crack the egg into the hole. Cook on both sides (I leave my eggs a little runny), then cut it up all together.

My DH calls it a toad in a hole.

Last week I didn't stick to our meal plan at all, but in a good way. The dishes that I made ended up being so big, we had leftovers FOREVER. Not so great in variety, but very easy on the $$.

This week is as follows:

Saturday: Chicken and rice casserole, green beans, salad, french bread rolls
Sunday: Tacos, spanish rice & corn casserole
Monday: BBQ pulled pork sandwiches, baked beans, salad
Tuesday: Chili, cornbread, salad
Wednesday: Salsa chicken, rice, corn, salad, french bread rolls
Thursday: leftovers
Friday: Pork pies, salad, carrots, beer bread
Saturday: Homemade pizza

After this week, my DH is done with poultry for a bit, so I'm trying to keep it to a minimum. Plus I got a great big pork roast from my mother and a great deal on a huge chunk of hamburger meat (don't worry - I cut them up into portions I would use and freeze).

Chicken Soup and Buns

Friday:
Tuna Casserole

Thanks for the recipe, becoming. Did you know that Club House makes a "crock pot" seasoning for Italian Chicken?

Thanks for the crock pot chicken recipe, becoming.
I served this over noodles and DP and DS said this was like "chicken stroganoff." We all enjoyed it, especially as leftovers, when I added peas and served over toast. This was really yummy.
