the one in NT is easy and good
1 whole egg
1 egg yolk
1 tsp dijon type mustard
1 tbsp whey (optional)
3/4 to 1 cup expeller pressed olive oil or sunflower oil
generous pinch of sea salt
put all but oil in blender or food processor and blend. Add oil gradually til it's the consistency you like. (I don't think we added even 3/4 cup because the recipe says it comes out runny and I like it thicker). Whey will let it last up to 2 months in the fridge. W/o whey you can use it for up to 2 weeks. Whey will also help it thicken more over time.
