Water kefir grains! What now?

I just got water kefir grains in the mail from an MDC mama, but now I have no idea what to do. I killed my milk kefir grains so I reeeeeally don't want to kill these ones!

I just use a jar with a wire bail type lid. Look for them at a thrift store, I got mine at a yard sale... I have water grains on the way too, can't wait to get them and stop using converted grains!

Okay, so on Dom's website it says to put the lid on tight. So I screwed it on tight but I'm kind of scared. There is about 3 inches of airspace in the jar so it shouldn't blow up................right?

I just bought a juice decanter with a pop in top-wasn't airtight, but it still got fizzy.



Also used mason jars.....the jar that my grape juice came in with the vacuum-pop-style lid....If it got too tight to be able to pop the button down, I'd bleed it off a bit-

The only thing I will warn you about is using too much fresh lemon- the grains are not too fond of the citric acid and I think that's why my first batch died. When adding the lemon slice, let it sit out for a day or two before adding it. If I were to make a bubbly lemonade, I would brew a plain batch of water kefir first, strain the grains, and then add the lemon juice and let it ferment for another day.

As for the air tight lids- think of it as freezing liquid in a canning jar. Leave enough space(the 3 inches sounds good). I also open it periodically just to be sure. Plus I'm a bit neurotic and check the process, taste testing along the way.

That's what it's called- wire bail lid- I could not think of it for the life of me!! I got a couple different sizes at the thrift store as well- best $3 I ever spent.
