Need to make a meal for someone who is allergic to dairy, wheat, and high frutose corn syrup

Ok, I have a few ideas. This is also a meal for others who don't have allergies, but this one person does.

I was thinking of shepherds pie. The recipe I have calls for cream cheese and chedder cheese. I know they make cheese out their for dairy free people but what about the cream cheese?

Unless someone out there has a recipe for shepherds pie without these things?????

I am making it for a group of 6 people.

I'm not sure what the dairy allergy is about... is it an allergy to lactose? Many non-dairy cheeses still often contain caseine and/or whey, which are both derived from dairy. Also, I know from experience that making wheat-free pie crust is not easy. You might want to choose another recipe, jmyo.

What about a fish with seasoned rice (watch out for dairy in seasonings, though) and roasted veggies?

Actually, pasta could be a good and easy route to go. Just get rice pasta (make sure to cook it to just al-dente, otherwise it gets far too mushy). Something like:

I'd make a good stirfry with rice. Or assemble-it-yourself tacos - so they can have corn shells, and rice, and beans, and meat. If you simmer chicken in salsa, it's really tasty.

stuffed peppers.

sautee some rice with olive oil, garlic, onions, and any other veggies that you might have (zucchini and mushrooms are yummy). if you eat meat, you can add some ground meat (beef or turkey), if not, you can add some sort of meat substitute, or keep it completely vegetarian. spoon the mixture into pepper halves and top with tomato sauce (make sure it doesn't have hfcs in it, as many store-bought sauces do, unfortunately.) you can make a batch of it for the other guests topped with regular mozzarella cheese, and a few of them with a 'safe' cheese. bake until the peppers are soft.

How about chili? You can serve it with baked potatoes or brown rice or tortilla chips. It's super easy to make from scratch.

You could do a pasta dish with tinkyada brown rice pasta.

Various curries and dals with rice and some chutney.

I am making it for a group of 6 people.
My son has a milk protein intollerance and I make cheddar cheese. For the base I just fry up some ground meat (deer), add some beef stock and then a bit of tapioca starch to thicken it up. Pour it into a cake pan. Add mixed vegetables on top of that, top with mashed potatoes, and hten on 1/2 of it I put cheese on the top, the other 1/2 I do nutritional yeast for a cheesy flavour.

Those are exactly my dietary restrictions. My recommendation would be to stay away from casserole type dishes with lots of substitutes needed. It can get really complicated and expensive, and some without allergies might not enjoy the flavors of the substitutions.

We tend to stick with simple meals that those without the allergies can add their own cheeses and such to. Rice pasta with a red sauce would be great with a salad and bread for those who can eat it. (I like the Trader Joes rice pasta if you have one available, the other good brand is Tinkinyada (sp? I don't have it here in front of me). Grilled fish/chicken/meat with vegetables and a seasoned rice would be great. Stir fry (watch the sauces, soy sauce has gluten but there are gluten free options out there). Assemble your own tacos would work if they can have the corn tortillas. I can't, but I'm happy to make myself salads with the taco fixings. Chili is also easy to make with those allergies, and you can serve cheese and sour cream if you like for the others. Stews and soups are popular at our house as well.

And bless you for actually making the effort on this. Most of the time we go anywhere I end up nibbling on the salad without dressing because people think a little bit won't hurt.......

Baked crispy chicken thighs, in the same oven bake some seasoned potato wedges using some lard to make them delicious, and a green of some sort if you want it.

OOOh thanks for all the good ideas. I couldn't do pasta though, he is allergic to the wheat.

I do like the idea of chili and stuffed peppers. I just might have to do that. I do have some already made spaghetti meat with homemade sauce in the freezer, I could scoop some in and put some "cheese" on top of most of them. Then I could make a salad. Yeah....thanks gals!!

www.kathysrecipebox.com - I have a bunch of recipes that would work - I think there's a few chicken crockpot recipes on there. I serve most things over rice, because 2 of my kids can't do potatoes. But you just put in your allergens in the search, and it will give you the recipes you can use.

Also, when you say high fructose corn syrup, is he allergic to all corn? If so, don't use regular baking powder or iodized salt or confectioners sugar. All of those have corn in them.

Tinkyada brown rice pasta is gluten-free. There is no wheat in it. And it's tasty, unlike some other GF pastas.

It's pretty easy to find rice pasta if you want to use this sauce. Or you could use a vegetable peeler, and make "zucchini noodles" (basically you peel them, and then use the peeler to make thin strips out of the vegetable). Saute it in oil for just a minute or 2, and serve the sauce over it. I do this for DD and myself when others are having spaghetti, and it's pretty darn good. Just make sure you're spaghetti sauce is completely dairy free - a lot of canned products like to put whey in things to up the protein content. But if it's all from scratch, you should be good.

Another meal idea is a roasted chicken, oven roasted potatoes, green beans, and salad. This is one we use at our house a lot!
