We had vegetarian "steak" sandwiches with sauteed mushrooms & onions, cheddar cheese on sourdough and homemade butternut squash soup with apple.

Cheese and tortilla lasagna. :

The kids wouldn't eat it. So they had PB&J sandwiches. More leftovers for me!

we are having a whole roasted chicken with gravy, roasted rosemary potatoes, roasted sweet potatoes and beets, salad, asparagus (from frozen), and a side of kimchi.

The chicken tortilla soup last night turned out *awesome*! Here's the recipe, in case anyone's interested:

Chicken Tortilla Soup

1 lb. boneless skinless chicken breast, cubed
1/2 tsp. olive oil
1/2 tsp. minced garlic
1/4 tsp. cumin
1 cup frozen corn
1 cup chopped onion
2 cans chicken broth
1 cup chunky salsa
1 Tbsp. lemon juice
To taste: chili powder, garlic powder, salt, black pepper, paprika
shredded Colby & Monterey Jack cheese
sour cream
tortilla chips

Heat olive oil in large pot over medium heat. Brown chicken. Add minced garlic & cumin. Then add chicken broth, corn, onion, salsa, lemon juice, and seasonings. Bring to a boil. Reduce heat to low and simmer for 20-30 minutes. Crush tortilla chips into bottom of soup bowl and ladle soup on top of chips. Top with shredded cheese & a dollop of sour cream.

Tonight we're eating out with my parents. :

I'm so going to try that tortilla soup recipe!

Last night we had pizza and chef's salads. Tonight its leftover ham in sandwiches and leftover split pea soup.

Tonight we are having chile pepper cheeseburgers with baked french fries and a salad. :

Tomorrow night it's grilled cheese and soup. :

Chicken tortilla soup is SO good (if anyone is in Houston, El Rey Taqueria has the BEST chicken tortilla soup. They've won AWARDS) and honestly, I don't even think you need the sour cream or cheese (and I love that stuff!)

I made a "make-do" chicken tortilla soup 'cause dh was sick (and ds and I are rapidly following his footsteps) out of leftover turkey soup from Thanksgiving (it was in the freezer and I froze the meat and soup separately, although I don't know why) and added a can of diced tomatoes and a can of green chiles and served it with tortilla chips and salsa (mix into the soup) and it was honestly on par with El Rey!

I tortilla soup, and I add black beans and zucchini/yellow squash to mine to up the nutrition.

Ms. B Sprout, so sorry it's taken me so long to get back and check this thread, but the Turnip Gratin recipe is from Epicurious and it was yummy. I was skeptical about a 4-star turnip recipe but this was awfully good. I just sliced 'em thin w/a regular ol' chef's knife, and didn't have any fresh savory, but otherwise followed the recipe to a T and it turned out well.

Tonight's dinner is homemade pizza: one w/eggplant & roasted red pepper, one plain, and one pepperoni.

I'm joining the thread to get some ideas

I'll post some catch-up meals we've had lately:

- london broil baked w/onions and steak sauce, acorn squash, salad
- boneless chicken breasts baked with salad dressing; sweet potatoes, salad
- chilli w/beans and Jiffy : cornbread


I'm pregnant, so we've been a lot heavier on the meat than usual. When I'm not pregnant, we have several veggie nights a week.

Tonight is chicken soup my mom made and brought over :

Thanks for the turnip gratin recipe, VK! I have a ton of turnips and I'm going to try it out soon.

Tonight we made tortilla soup (inspired by this thread, of course ). I hadn't seen the recipe posted above -- I used a friend's recipe:

In large pot, saute 1 1/2 cups onion and 5 cloves of garlic. Add peppers (1-2 fresh chilies) minced, 1 tsp. cumin, 1/2 tsp. oregano, and 1 pound chicken and cook until chicken is done (about 10 minutes).

Add 4 cups tomatoes, let them release their juices, then add 3 cups stock, and 1 cup corn. Simmer about 10 minutes. Add juice from one lime, s and p. Add MJ cheese and chips in bowls and fresh cilantro.

It was very good.

I made the best soup...and two of the three kids wolfed it down!

We could call it Squash Chicken Soup (I don't use recipes or measure....sorry!)

Butternut Squash (or any other orange winter squash) boil and mash
Chicken Breasts - boil or sautee and tear into chunks.

Sautee all of this in a couple of tablespoons of butter in a big soup pot.

Onion
Celery
Parsnips (my new fav to cook with in place of carrots: not as colorful, but I LOVE the taste!)
Fresh Parsley
2 cloves Garlic
Salt and Pepper
Sage or Curry (BIG difference I know....depends on what taste you are going for...They are both good though!)
2-4 chicken boullion cubes


Flour - add two tablespoons to soup pot when veggies are "done"
Milk / Water - slowly add to soup pot while stirring ( I use some milk and some water or if you are not using boullion cubes; use chicken broth here)

Mix in chicken and bring to a boil. Let it simmer for 3-5 minutes.
Mix in squash and a bag of frozen corn (run hot water in the bag to warm corn and it won't take as long to come back to a boil) or canned corn.

You could use chopped kale or spinach for a green bit of color in this soup too...I just didn't have any at the time.

This soup was delicious. Everyone in the family loved it (except 2 year old who won't even try things....AAARRRGGG, but I know he would have liked it!)

Well since it's January and money is tight I've made a list of what is in the cupboards and freezer and am trying to use up as much food as I can before buying more.

So far we've had spaghetti, tomato-bean-cheese pasta casserole and soup.

I spent some time looking through one of my casserole recipe books and made a list of the recipes that will work with what we have. DH was happy to learn this as he's seen my credit card bill after the holidays. *Yikes* Anyways I am trying and that's the main thing.
