I recommend you do a sock, or a baby sweater. When I first learned to knit, I didn't know any better, so my first project was a scarf (which I still have), my second was a hat for my sister, and my third was a baby sweater (which I promptly gave away).
Only after the question "Is knitting hard to learn" did I realize that most people spend years making scarves, potholders, and dishcloths because they think that they "can't" do anything more complicated until they are "experienced". But of course, they never challenge themselves, and socks and sweaters are "too difficult".
Take it one stitch at a time - it's really not as scary as you think it is!
