I'd like to teach my daughter how to knit, but I need resources for this, should I jump to needle knitting or do finger knitting first? Is there a book I should buy or online website that gives great tutorial? She is in the first grade, and *just* turned 7. Washcloths for the first project or is there something more fun?

I don't think you need to start w/finger knitting. DS is in first grade at a Waldorf inspired charter school, and they started knitting this year. They made their own needles, probably around size 10-11, and they use Lamb's Pride Bulky. Their first project was a ball made by knitting a square in garter, the gathering both ends, and stuffing it. They've also done a stuffed cat and are working on small bags for their pentatonic flutes now. No increasing or decreasing yet. I would definitely start with wool, on bamboo needles--either circular or short straight needles. I think cotton is much harder to start with because of the lack of stretch and can be hard on the hands. Maybe a little blanket in garter stitch for a small doll or stuffed toy? DS made a small scarf, maybe 5-7 stitches in width for his stuffed dragon.

I'm teaching my dtr how to knit. She's 6 now and can do a reasonable garter stitch. I have the book "knit a square, make a toy" that I will be using to make something for her when she actually finishes a whole square.

DS has been learning (almost 5). We just sat down one day with some pretty thick (like heavy worsted) yarn and circular needles (with a very flexible cable). I demostrated for a bit very slowly, then sort of transitioned to my normal speed so he could see it happening. He's a visual learner. When I handed him the needles, he had to play for a bit before he wanted any help. When he asked for help, I sat him in my lap, held his hands holding the needles and began to slowly knit. We recite this little diddy:
In through the front door, around to the back, out through the window, and PULL it off!
