Does anyone have a favorite they'd care to share? Thanks!

What are you avoiding?

the top eight...

It's going to be hard to find a mix that avoids wheat. I'd say your best bet is to find an allergy cookbook at your library and make one from scratch.

We really like the Namaste Foods cake mix. None of us have food allergies. We just buy it because it's yummy.

Al;lergies are mostly due to bits of food escaping into blood due to leaking ilio-fecal valve in bowel.

If you switch to raw food won't be a problem

good luck, Carole

I have a vanilla cake recipe on www.kathysrecipebox.com which avoids 7 out of the top 8. It still has wheat in it. I tried to make banana bread yesterday that didn't have the top 8, and the taste was good, but the texture wasn't so great. I was going to experiment again but DH and DD got into the bananas and I only have 2 left. Argh. Anyway, you could play with my vanilla cake recipe and see what you could do for gluten free. http://www.westonaprice.org/foodfeat...uten-free.html -- there's a good table on this page for substituting for gluten. Good luck. And if you're successful, let me know and I'll put it on my website. I'm always looking for good gluten free recipes on there (that's one of the few foods we CAN have).

I just added the banana bread recipe to my website. I wonder if you could double it and make it in a bundt pan? It does avoid the top 8. It's a little hard to cut, probably due to the lack of eggs as a binder. But the taste is good and the texture is good. I don't know any cake mixes/recipes that don't have any of the top 8 in it. Some will have wheat but no eggs or dairy. Some will be gluten free, but still have eggs and dairy. This banana bread recipe would be good as muffins/cupcakes too. You could get corn-free confectioners sugar (or make your own; I do) and mix it with rice milk, for an icing. Would that work for you?

CherryBrook Kitchen or something close to that name makes a yummy chocolate mix that doesn't have the top 8. Just make sure you have the wheat-free mix as they also make a peanut-free wheat mix.

We really like the
Cherrybrook Kitchen mixes.

not a cake, but cookies - the pp's Cherrybrook Kitchen mixes are good - but be careful - The fudge brownies and chocolate chip cookies have soy lecithin. I just made the Sugar Cookie mix (sub 1/4 applesauce/applebutter, 1/4 melted shortening (spectrum), dash salt for the butter) and I really like it. I think I would like it, even if I was doing an elimination diet!

They have a chocolate cake, which is ok, ingredient wise, but I was wary to try it - my mil is a celiac and I have tasted too many bad cakes for it to be top of my list. If you try it, you should give us a review!

Is there seriously corn in confectioner's sugar?

I'm in the middle of banging my head against the wall - it's in powdered sugar, it's in baking powder, heck, there was corn derived something in my veggie chips! We're going all the way, but we're pretty sure it is wheat or gluten. (hereditary)

FYI http://karinasrecipes.blogspot.com/has some vegan (think no egg or dairy - yeah!) gluten free recipes. She uses corn in a lot of her recipes but you can check and pick your favorite flour blend.

I think I'm making the vegan chocolate chip cookies tonight

You can make your own confectioners sugar by blending regular sugar in a coffee grinder. It's not quite as fine, but it'll usually do.

Also allerygrocer.com has lots of cake mixes and even frosting (Mrs. Roben's brand) that are corn-free. You can do a search by which allergens you are avoiding.
