Quick food chemicals question (bananas and amines)

Does anyone know if bananas have more or less amine content when they are green vs. overripe? Just wondering if there's a correlation. My dd hasn't reacted to ripe bananas, but she ate a less ripe one today and she's got a flare up behind her knees. Thanks.

Hmmmm...I dunno. I do know that I'm latex allergic, and non-ripe bananas make my tongue burn like crazy. Ripe bananas don't.

Thanks for your insight, Mamaverdi. I'll have to take a look at the latex allergy family again to see if she reacts to any of the other foods in that group.
