LTK soaker question~don't want to crochet edge

Hi all,
I am still fairly new at knitting, so bear with me if these questions seem obvious!
I am currently knitting the LTK soaker for my wee one-
I really don't want to do the crochet edge around the leg openings- I like a rib knit edge. I am wondering if any of you have done this, and what you'd recommend. Here are my specific questions:
How many stitches should I pick up? (I'm knitting the largest size)
I was planning on using #4 dpns- is this what I should do?

I have no idea how many stitches you need to pick up.

You can definitely use 4 dpns to knit the ribbed cuffs.

Well, maybe it doesn't matter. I am just worried about making them too tight. Maybe I'm just overthinking it!

Just make sure as you go that you are not doing it too tightly and you should be fine.

I usually pick up one stitch for every stitch around the leg opening.

I like to p/u one stitch for every stitch where the picked up stitched line up with the body, and 2 stitches for every 3 rows where it's perpendicular.

I don't know how to crochet, but I just bind off VERY loosely.

I pick up 3 stitches for every 4 rows, and usually do a 2 x 1 ribbing for 2" or so, then do the sewn cast off to keep it nice and stretchy.
