These bones still ok for stock?

I roasted a chicken on Sunday. After I deboned the thing the bones have been sitting in a ziplock bag in the fridge. I have just been too tired to start stock. I work all day tommorrow and will be out all night so I wouldn't be able to start it until Saturday.

As long as the bones don't smell funny, would you still use them?

If they smell fine, I'd use them. I might stick them in the freezer until I can get to them, just to be sure.

What I do, when I'm done picking the bones, is to either put them in a pot on the stove or put them in a bag in the freezer. That way I know they won't get too old to use if things get busy.

I keep mine in the freezer, along with odd veggie scraps that I collect over a week or two.

But, yes, if it smells ok, use it. After all, you're going to be boiling the darn thing! Maybe add extra garlic, for good measure?

That used to happen to me all the time.... until a wise friend of mine told me to make my stock in a crockpot - so as I debone the chicken I just toss the bones in the crockpot - set it to high until I go to bed and then turn it to low at bedtime, its ready for soup or to be frozen the next day!
