NT biscuit failure

I just made the recipe from NT and even used the cheater's version of 2 cups wwf and 1 cup white flour and they were still rock hard and the kids didn't eat them because they were expecting light and fluffy. UGH!! I'm so frustrated with them not eating things that I cook!!!! We started eating TF two years ago and have really been pretty committed (with some exceptions) for a year. They just haven't acquired the taste yet. Anyway, is white flour going to screw up their teeth and cause eventual degenerative diseases even if it's good stuff and it's soaked? My hunch is "yes." I've never used spelt, would it make them rock hard too? Is light and fluffy a thing of only processed bad stuff? I may not cook for a week other than eggs (which they don't always eat either). I just feel so defeated!!

I posted my recipe for buttermilk oat flour biscuits here. I soak the whole oat flour (ideally overnight) in buttermilk and it makes the yummiest biscuits. They're soft, tender and cake-like. My toddler asks for them every Saturday.

I think that you can totally make high-quality, flavorful and well-textured dishes from nourishing foods, but that NT doesn't have the best recipes by a long shot.
