Rendered animal fat uses

I rendered some beef tallow from some ground beef the other day just for kicks, and am rendering some lard on the stove right now. From what I've read, the lard is better for cooking.

What do you do with your animal fats? Fry potatoes? fry pancakes? what else?

We can't do butter here, - severe dairy allergy, so I'm looking for other ways to add fat and move away from canola oil.
