Using up chicken livers

A while ago, I bought a pound of chicken livers (just the regular kind) and used half to make dirty rice. Well, we didn't like that very much, so I have the other half sitting in the freezer and need a yummy idea to use it up (not raw, we aren't there yet.)

We like liver and onions. Fry a sliced onion in plenty of butter until it's very limp and then take the onion out and set aside. I soak the liver in milk for a couple hours (seems to cut the bitterness) and then dredge in flour, salt and pepper. Fry it in the butter and try not to turn it much or it can get tough. Don't overcook it. When it's done, add the onions back and add some water and you'll get a beautiful gravy. Great over wild rice with a nice veggie on the side! If you like liver, that is!

Chopped liver or chicken liver pate. I love the chicken liver pate recipie from NT.

For chopped liver, I boil the livers in water for 10 mins. In a separate pan, sautee onion (my recipie calls for a whole onion to 1 lb liver, but I usually use less) slow and low in butter or bacon grease until soft and browing but not crisping. Drain liver (I give the broth to my dogs) and chop in food processor until smooth. Add onions and chop to desired consistency--I like it a little chunky. Add salt and pepper to taste. This is great on toast or crackers; it's one of my and dd's favorite breakfasts.

Wrap them in bacon and fry them up! They're so yummy this way!

I grew up with this being a staple in our house! I second the pate-it's so yummy, and also the frying with bacon wrapped around them. I personally like to cook them in some butter with a little bacon and serve them over a nice plate of green salad with a good dressing like a vinagrette. With bread and a glass of wine DH and I sometimes have a nice "grown-up" dinner. But my kids love 'em too! One aside-I would try to get organic or at least local organ products if it's at all possible for you.

Do you have the cookbook "Nourishing Traditions?" She has a wonderful recipe using chicken livers in spaghetti sauce. I know, it sounds gross, but it is absolutely delicious! My entire family (DH, children ages 12, 6, 4, 2) love it!

I make it in large batches and freeze it.

I sneak little bits into stews & soups. We haven't found a good chicken liver recipe that we like yet. The liver taste is too overwhelming.

Thanks for the great ideas! I do have NT.

The spread idea sounds fun. DS might like this, as he is into all things spreadable. The other ideas sound good.

I wish they were organic,/local. But alas, they are not. We are working on moving in that direction.
