seasoning ground pork for sausage - limited options

We don't have alot of spices on hand, but I'd like to turn 2 pounds of ground pork into a nice sausage mix.

We have : garlic, onions and ginger

5-spice powder, cinnamon, cloves, dry mustard, pepper, salt, cumin, chili, hot pepper, (I'm probably forgetting something, but we haven't been able to restock nutmeg, allspice, mace, etc.)

Fresh herbs : thyme, sage, oregano, and rosemary,

What can I do with these to make a balanced mix for my pork?

I would use sage, onion, pepper and salt.

It it was me I'd use a lot of sage, easy on the rest.

Maple syrup is also a very yummy addition to pork sausage, if you have it.
