Tonight I made lentil soup with tons of fresh veggies - carrots, celery, spinach, chopped tomato, purple potatoes, red peppers, onions, and garlic. We'll heat that up for leftovers tomorrow night.

Tempeh BLTs
Roasted spaghetti squash
Pinto bean pie w/cornmeal crust
I also just ordered veganomicon and the joy of vegan baking and they should come this week, so I might try some new recipes!

. Made Veganomicon oatmeal choc-chip cookies. Very disappointed. It may have just been me overbaking them, but the flavor didn't rock my world - I'm on an eternal quest to find a recipe I love). Also made lentil stew to freeze for another cold winter night. And, started prepping appetizers for tomorrow night's Super Tuesday party - sundried tomato, sage, walnut tapenade and fagioli in fiasco (Tuscan beans in a bottle).

, but it was a nice touch, I admit). Puff pastries with strawberries and soyatoo whip for dessert.
