What's For Dinner? ~ February Thread ~ - Page 2

Tonight I made lentil soup with tons of fresh veggies - carrots, celery, spinach, chopped tomato, purple potatoes, red peppers, onions, and garlic. We'll heat that up for leftovers tomorrow night.

The rest of the week, we'll probably do:
Tofu scramble
Vegan Broccoli salad
Tempeh BLTs
Roasted spaghetti squash
Pinto bean pie w/cornmeal crust

I also just ordered veganomicon and the joy of vegan baking and they should come this week, so I might try some new recipes!

When I was at Costco yesterday I picked up this bagged salad mix that looked interesting: Asian cabbage with a packet of Sesame Orange Dressing, Honey Roasted Soynuts, Dried Pineapple, and Chow Mein Noodles.

I think I will make that tonight along with some Sweet & Savory Baked Tofu and maybe some roasted broccoli.

My DH leave tomorrow for a week, I'm making 2 big pots of soup today and the girls and I will eat those for the week. We'll also have pancakes one night, because the girls think it's so funny to have pancakes for dinner when daddy's gone!!

Ds1 would love it if we ate pancakes for dinner every night.

I made black bean chili with couscous tonight. Probably make a salad as well and serve with corn tortillas and avocado.

TVP sloppy joes on w.w. buns, garlic mashed potatoes, and baby brussel sprouts. Easy, but a hubby-pleaser.

I can't get DS to eat pancakes. Maybe it's my recipe (Vegan Vittles Banana Pancakes). Anyone care to share a good pancake recipe?

Tonight, DH will finish off the Lemony Chickpeas, Spinach & Potatoes while I eat a tomato soup brought over by our generous, thoughtful neighbor.

I cooked up a storm today, though (it was snowing here...that always makes me cooky . Made Veganomicon oatmeal choc-chip cookies. Very disappointed. It may have just been me overbaking them, but the flavor didn't rock my world - I'm on an eternal quest to find a recipe I love). Also made lentil stew to freeze for another cold winter night. And, started prepping appetizers for tomorrow night's Super Tuesday party - sundried tomato, sage, walnut tapenade and fagioli in fiasco (Tuscan beans in a bottle).

I made the infamous chickpea cutlets tonight, but I made them teeny and called them Chickpea Noogies (instead of chicken nuggets). Then I slapped together a fake cheez sauce out of silk creamer and shredded soy cheez and garlic salt. Oddly, the toddler who is usually more adventurous didn't like them, and the kindergartener loved them. Toddler ended up eating the leftover chickpeas from the can!

Tomorrow I want to make Aloo Chana soup from The Garden of Vegan cookbook -- it's wonderful -- but we'll see how the day goes. We have a crazy day of appointments and guests and etc., so it very well could be pb&js tomorrow night.

Yesterday was a vegan california club: vegenaise, tempeh bacon, fake ham, spring mix salad, sprouts, and avocado.

Tonight was Cheezish Macaroni from the Gladcow Cookbook!

Tomorrow will be veganized Mushroom Pumpkin Curry soup.

Tonight I'm making chickpea noodle soup with the new alphabet noodles from TJs that my kids adore.

Had a fun Super Tuesday party last night - dinner of rigatoni, eggplant & tomato with a side of home made emmer bread, Tuscan bean spread (a failed attempt at beans in a bottle) topped with sun-dried tomato walnut sage tapenade, side salad (! no, I didn't make it , but it was a nice touch, I admit). Puff pastries with strawberries and soyatoo whip for dessert.

Tonight is Nepalese buffet at the place behind our house - hurray!
