TF cake recipe and desserts

okay something ahppened with my other thread,i keep showing an error. Anyhow, I was saying that my DD's bday is coming up in March. I would liek to make her cake, but Im not sure how to go about it. Does anyone have any recipes? How about filling for the cake?

And while we are at it, does anyone have any TF dessert recipes? I stopped making all of this stuff when we started to eat TF, but sometimes we like to have sweet bread with tea

I just don't feel like typing things up.

I have some TFish cupcake recipes, never tried making a whole cake though.

Do you want cupcake recipes?

It sounds funny to call them "TF" because TF societies didn't eat cakes & cupcakes, kwim? Full Moon Feast has some delicious "dessert-y" type recipes that are traditional. The cupcakes I make are just healthy - gf/cf/sugar-free. LMK if you'd like the recipe.

You may be able to tweak a recipe you already have. You might have to experiment a few times, though. Try using 'healthier' sweetners in place of sugar, use sprouted flour, see if you can figure a way to soak the flour overnight as part of the recipe. For icing you can use a mixture of nut butter (I like almond), butter, honey, and cocoa. Makes a nice thick icing, without icing sugar

You could also try making a spice cake or carrot cake to add nutrients to the cake. Sorry I can't be more specific!

For cookies we often make the recipe on herthelde's blog (frijashearth.blogspot.com *I think*) for Almond cookies. Doesn't seem to mess with blood sugar nearly as much as normal cookies. It isn't TF in the sense that it isn't soaked/sprouted flour but it doesn't have baking powder and is low in sweetener, high in fat.

thanks! yeah I know saying "TF cake" sounds silly BUT we have to remember where pies orginated, to preserve food. Maybe I should have titled my post Tf friendly lol.

i modified a recipe from Mark Bittman "How to cook everything" cookbook yesterday and made a totally scrumptious recipe for dh. i soaked spelt flour overnight in homemade yogurt. then added all the other cake recipe ingredients, substituting rapadura for sugar. i had to guess on the liquid measurements and just went for the right amt of wetness. i was worried it would come out to dense but was so spongy and moist!!! i added the "carob sauce" recipe from NT, only i used real cocoa instead of carob& cocoa extract. o.m.g. we ate the whole cake!!!

Modified Basic Cake Recipe

Golden Layer Cake

10 TB unsalted butter, softenened
2 c flour *
1 1/4 c sugar *
4 eggs or 8 yolks
1 tsp vanilla extract or 1 TB grated or minced orange zest
1/4 tsp almond extract
2 1/2 tsp bkg powder
1/4 tsp salt
3/4 c. milk *

bake at 350 for 25 min in 2 round cake pans.*

*I soaked spelt in yogurt overnight.
* Rapadura
*added but didn't measure. just looked for desired consistency, probably 1/2 cup.

*Then I baked it for about 30-35 minutes in a single layer cake pan.

I actually have a wonderful carrot cake recipe that you can totally make NT. YOu soak it for a while in the wet ingredients and could easily leave it overnight! It is from an old vegetarian book


1 cup grated carrots
1 cup raisins
3/4 cup honey
1 tsp cinnamon
1 tsp allspice
1 tsp salt
1/2 tsp (fresh grated is best!) nutmeg
1/4 cloves
2 tbslp butter or oil(recipe calls for margarine!yikes)
1 1/2 cups water
1 1/2 cups whole wheat flour ( use a mix of plain and spelt and whatever...customize it!)
1 tsp baking soda
1/2 cup wheat germ
1/2 cup chopped walnuts

preheat oven to 300.
cook carrots, raisins, honey, butter, spices in water for 10 min. allow to cool.
mix together flour,baking soda, wheat germ, walnuts.
combine
(this is the step where you could soak it half a day or something)

bake for 45 min.

I love this cake but dh does think it is too much like a fruitcake. So I am sure if you had a carrot cake recipe you like, you could use similar ways of making it and soaking. I love the texture of this cake as it is very moist.
